Now that the ingredients are ready, it’s time to get cooking! No need to worry—just toss everything into the pot and season it to your taste. Let’s go step by step:

  • Let’s make the curry paste first. Use a blender to blend all the curry paste ingredients with 1 cup of water until smooth and well combined.
  • Boil 5 cups of water in a pot. Once boiling, add the blended curry paste.
  • When the water boils again, add the pounded snakehead fish meat, carrots, and cauliflower. Next, carefully place the cleaned and cut snakehead fish pieces into the pot. Avoid stirring at this stage to prevent the broth from becoming fishy. Let it boil again, then add the fish pieces back in.
  • Flavor the broth with tamarind juice, fish sauce, and palm sugar. Stir until everything is well mixed.
  • Add the vegetable hummingbirds, long beans, and Chinese kale. Let it boil until the vegetables are tender. Then, serve hot in a bowl.

Feel free to add your favorite veggies like water mimosa, morning glory, or young watermelon. You can even swap the snakehead fish for fried fish or shrimp for a different twist!
